2 punnets baby carrots, peeled and washed
1 teaspoon salt
2 tablespoon maple syrup
2 tablespoon olive oil
2 tablespoon butter
Fresh parsley chopped, to serve
- Preheat oven to 190 ◦C
- Heat an oven proof dish to medium heat on the stove top, add 2 tablespoons olive oil and place carrots in a single layer into the pan, gently fry carrots until just seared and lightly golden in colour, about 5 minutes.
- Add maple syrup and butter to the carrots and place in the oven for about 15 minutes or until just cooked and golden in colour.
- Remove carrots from the oven place into a warm serving dish and sprinkle with chopped parsley.
- Serve immediately.
